Can I hardwire my Pioneer DEH-S5010BT to the existing harness on our 2004 & 2007 Freightliner M2 Business class simply by matching wire colours?

Only if the vehicle had a aftermarket radio already installed. The colors should match pretty exact all the wires with Red, Yellow, Black and 2 Whites, 2 Greens, 2 Grays, and 2 Purples for the 4 speakers.
