I have a 2015 peterbilt 579 looking to change radio .when I do will I still be able to use radio in sleeper to turn up or down main radio ?

Sorry no. There is no feature built in a aftermarket radio do allow you to do that. The only thing that would do that would be a remote control for the new radio.
